Dinner tonight

MMMMM Good.

Brined two chickens and did one up on the rotisserie and the other in the oven.  Both were outstanding.  Both cooked up in the same amount of time.

Chicken is my fav.  Any particular brine recipe? Alton Brown fan?

5 quarts of water with 1 1/4 cup Morton's Kosher Salt and 1 1/4 cup of brown sugar.  This is for a 4 to 5 lb whole chicken and I like it best when in brine for 8 hours.  Good at 4 hrs, good at 6, best at 8 and good at 10 hours.  Wife likes it best at 10.
