There is a chance, but you know somebody is sitting there with pocket hearts. And there's a chance that another heart will show up on the turn or the river, and that brings everyone with one heart in the hole into the mix.

No, but somebody with hearts in the hole has already made his hand. Going from 2 straight to a boat takes a considerable amount of luck even with two cards to turn. There are only 4 other cards in the entire deck that will make his hand. Whereas even if somebody else has only one heart in the hole, there could be up to 9 cards that could make his hand.
RMS guy ended up winning it with a flush with two whole hearts. also, a 7 came out on the turn, rendering my 2 useless which was pretty much when I folded.
It figures. That *feces* always happens, so I don't think I would have stayed for even one card when looking at 2 pair after the flop. If I matched up trips, I would have probably stayed in until the end. But even then, I probably would have lost.
