but does anyone else have this problem?
typical pot pie: too much crust for the amount of 'soup' inside. usually end up leaving 1/2 of it behind. also, not enough potatoes in the 'soup' part

Rather than a pastry crust, try biscuits (the pop-open-in-a-tube type) on top of the filling. Just bake until the biscuits are done.

Actually I'm with Aske on this one. In fact I'm not too keen on pie crust period. I'd prefer to just eat the filling, but I know it wouldn't be pie.

It's just not that simple. Crusty top and edge crust - Soft and soggy bottom crust - If possible, I'd have my pot pies as inners with a side of outers please. Crust v. filling ratio is not the most disturbing problem when it comes to pot pie though. Any of you have a problem with this celery thing? WTF is up with that? A pot pie should have meat, potatoes, carrots, onions, sauce and maybe one or two other favorites but celery...? No way.

I had a fantastic pot pie for lunch last week at Ozzie's - a sports pub and grill ran by Ozzie Smith. It bordered on a too high crust to filling ratio, but came in well under the wire and was fantastic. No small pie either - this baby was sizable and loaded. The top was a really light crusty pastry crust that was awesome. The bottom was still the soggy stuff, but the size of the pie made it more than tolerable. Oh, and no celery

You don't like pie crust? Maybe you just need a better recipe... I have one that turns out perfect every time, very flaky and light. *thinking* Maybe I'll go find that recipe thread and post it there.

I remove the top to eat the bottom crust and some of the filling first, then I eat the top and side crust with the rest. Voila! No soggy crust! Celery is in seemingly every soup, and it's my least favorite vegetable when cooked, especially if it's cut into thick pieces. *shudder*
